What we do in Maine

Karen's Chicken Pot Pie

1 rotisserie chicken

1 cup broth

8 oz. frozen mixed vegetables, slightly cooked in microwave

1 ¾ cup half and half

1/3 cup flour

1 pie crust

Heat broth, stir in flour and ¾ cup of cream, stir and thicken. Then add one more cup of cream, vegetables , and torn up chicken. Pour into 9” pie plate, place pie crust on. Cook at 350” for 40 minutes, till golden brown.


And we captured a skunk! And there's more where that came from. The other night when Karen and I came home from seeing Dinner for Schmucks, a skunk showed us his impressive tail right in the headlights in her drive way. A neighbor has a skunk trap and experience in the skunk-catching business, so he set the trap next to Karen's barn, and this morning, there was a skunk! But James saw another skunk wandering around, after this one was in the trap. So there's more skunk-trapping to be done.

What does one do with a captured skunk, you ask? Apparently once in the cage, they cannot lift their tail and hence cannot spray. So this skunk will be driven to Burnham and released. Lucky Burnham!
